Chickpea Salad
OMG.
Chickpea salad, man. Easiest way to describe is egg salad but chickpeas instead of eggs. Good alone, good on toast. Good in a sandwich. Could probably only be better with curry. And beer. Have we talked about beer yet?

Vegan Chocolate Mousse
Edit: THERE ARE SO MANY THINGS WRONG WITH THIS. THIS WAS DISGUSTING. I literally fed it to unknowing victims to get a real response.

After being given a bag of vegan/kosher chocolate (I am NOT a chocolate fan- this makes me very unpopular in an office full of women), which has a great taste, I was eager to try out a sweet dish. After browsing a ton of recipes online, I settled on a mix of a few, keeping in minds those that do not require a double-boiler.
I went for simple, but obvious items; 2 large avocados (pitted), 2-3 tablespoons of agave syrup, a splash of soy milk, and about a half cup of cocoa powder.
This part sucked. And when a food processor is recommended,

Just smoosh everything together and stick it in the fridge. I ended up scooping it out of the blender (RIP spatula) and mashing it into a container. You know it's avocado but the bitterness of the cocoa covers it enough.
Topped with the kosher chocolate, it awaits snack time...
